Instructions

  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir the melted butter into the mashed bananas.
  4. Add sugar, egg, and vanilla extract, and mix well.
  5. Sprinkle the baking soda and salt over the mixture and stir to combine.
  6. Mix in the flour until just incorporated.
  7. Pour the batter into a greased muffin tin, filling each cup about two-thirds full.
  8. Bake for 20-25 minutes, or until the tops are golden brown and a toothpick comes out clean.
  9. Let cool in the pan for a few minutes before transferring to a wire rack.
