  • 1 pound ground turkey
  • 4 slices turkey bacon
  • 2 cups pumpkin puree
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 cup vegetable broth
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and chop into pieces.
  2. In the same pot, add the ground turkey and cook until browned.
  3. Add onion and garlic, sauté until soft.
  4. Stir in pumpkin puree, black beans, diced tomatoes, chili powder, cumin, smoked paprika, and vegetable broth.
  5. Bring to a simmer and let cook for 20 minutes. Season with salt and pepper.
  6. Serve hot, topped with turkey bacon pieces.
