Ingredients

- 1 pound ground turkey
- 4 slices turkey bacon
- 2 cups pumpkin puree
- 1 can black beans, drained and rinsed
- 1 can diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1 cup vegetable broth
- Salt to taste
- Black pepper to taste
Instructions
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and chop into pieces.
- In the same pot, add the ground turkey and cook until browned.
- Add onion and garlic, sauté until soft.
- Stir in pumpkin puree, black beans, diced tomatoes, chili powder, cumin, smoked paprika, and vegetable broth.
- Bring to a simmer and let cook for 20 minutes. Season with salt and pepper.
- Serve hot, topped with turkey bacon pieces.
