Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and garlic, sauté until onions are translucent.
  3. Stir in chopped artichoke hearts and kale, cook for another 5 minutes.
  4. Add vegetable broth, lemon juice, lemon zest, thyme, and red pepper flakes.
  5. Bring to a boil, then reduce heat and simmer for 15 minutes.
  6. Season with salt and pepper to taste.
  7. Serve warm, garnished with additional lemon zest if desired.
