Kuku Paka Recipe: Indulgent Kenyan Chicken in Creamy Coconut

  • 1 whole chicken, cut into pieces
  • 1 tablespoon vegetable oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 2 teaspoons curry powder
  • 1 teaspoon turmeric
  • 1 can (13.5 oz) coconut milk
  • 1 cup chicken broth
  • 2 tomatoes, chopped
  • 2 green chilies, slit
  • salt to taste
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Heat the oil in a large pan over medium heat. Add the onions and sauté until translucent.
  2. Add garlic, ginger, and spices; sauté for another minute.
  3. Add the chicken pieces and brown on all sides.
  4. Stir in coconut milk and chicken broth. Bring to a simmer.
  5. Add tomatoes and green chilies. Cook on low heat for 30-40 minutes until chicken is tender.
  6. Season with salt and stir in fresh cilantro before serving.

Notes

  • Serve with rice or chapati for a complete meal.
  • For extra heat, add more green chilies.
