- 2 pounds beef short ribs
- 4 cups beef broth
- 2 cups onions, thinly sliced
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon thyme
- 1 bay leaf
- 1/2 cup wine (preferably dry red)
- Salt and pepper to taste
- 1 cup Gruyère cheese, shredded
- 1 baguette, sliced
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onions and cook until caramelized, about 15-20 minutes.
- Add the garlic and cook for an additional minute.
- Incorporate the beef short ribs, thyme, bay leaf, and wine. Cook for a few minutes.
- Pour in the beef broth, bring to a simmer, and let cook for at least 2 hours until the beef is tender.
- Season with salt and pepper to taste. Remove the bay leaf before serving.
- Serve hot with toasted baguette topped with melted Gruyère cheese.
Notes
- For a richer flavor, use homemade beef broth.
- This soup can be made ahead of time and tastes even better the next day.
