Ingredients

  • 1/2 cup unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1 cup pure pumpkin puree
  • 1 cup powdered sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg

Instructions

  1. Preheat oven to 325°F (163°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a springform pan.
  3. In a large mixing bowl, beat the cream cheese until smooth.
  4. Add pumpkin puree, powdered sugar, eggs, vanilla, cinnamon, and nutmeg. Mix until well combined.
  5. Pour the cheesecake mixture over the crust.
  6. Bake for 50-60 minutes, until the center is set but slightly jiggles.
  7. Allow to cool, then refrigerate for at least 4 hours before serving.
