- 1 cup graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 16 ounces cream cheese, softened
- 1 cup pure pumpkin puree
- 1 cup powdered sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
Instructions
- Preheat oven to 325°F (163°C).
- In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a springform pan.
- In a large mixing bowl, beat the cream cheese until smooth.
- Add pumpkin puree, powdered sugar, eggs, vanilla, cinnamon, and nutmeg. Mix until well combined.
- Pour the cheesecake mixture over the crust.
- Bake for 50-60 minutes, until the center is set but slightly jiggles.
- Allow to cool, then refrigerate for at least 4 hours before serving.
Notes
- Serve with whipped cream for an extra treat!
- Can be made a day ahead.
