Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
  3. Press the mixture into the bottom of a springform pan to form the crust.
  4. In a large bowl, beat the cream cheese until smooth.
  5. Add sugar and vanilla extract, mixing until well combined.
  6. Add eggs one at a time, mixing well after each addition.
  7. Stir in apple cider, cinnamon, nutmeg, and salt until fully incorporated.
  8. Pour the cheesecake mixture over the prepared crust.
  9. Bake for about 60 minutes, or until the center is set.
  10. Remove from the oven and let it cool before refrigerating for at least 4 hours.
