  • 2 cups potatoes, diced
  • 1 cup peas
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium-high heat.
  2. Add the beef cubes and brown on all sides.
  3. Stir in the onion and garlic, cooking until softened.
  4. Add the beef broth, carrots, potatoes, tomato paste, thyme, and rosemary.
  5. Bring to a boil, then reduce heat and simmer for 2 hours.
  6. In the last 30 minutes, stir in the peas.
  7. Season with salt and black pepper to taste before serving.
