- 4 slices turkey bacon
- 1 cup chicken ham
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 cup heavy cream
- 2 cups lasagna noodles, broken
- 2 cups spinach, fresh
- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1/2 cup parmesan cheese, grated
- 1 teaspoon Italian seasoning
- salt to taste
- pepper to taste
Instructions
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
- Add olive oil, onion, and garlic to the pot and sauté until translucent.
- Pour in the chicken broth and bring to a simmer.
- Add heavy cream and broken lasagna noodles, cooking until noodles are tender.
- Stir in spinach, ricotta, and cooked turkey bacon.
- Top with mozzarella and parmesan cheese, allowing it to melt before serving.
Notes
- This soup can be made ahead of time and reheated.
- Substitute any greens for spinach as desired.
