  • 2 cups lasagna noodles, broken
  • 2 cups spinach, fresh
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup parmesan cheese, grated
  • 1 teaspoon Italian seasoning
  • salt to taste
  • pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. Add olive oil, onion, and garlic to the pot and sauté until translucent.
  3. Pour in the chicken broth and bring to a simmer.
  4. Add heavy cream and broken lasagna noodles, cooking until noodles are tender.
  5. Stir in spinach, ricotta, and cooked turkey bacon.
  6. Top with mozzarella and parmesan cheese, allowing it to melt before serving.
