  • 1 lime, juiced
  • 2 green onions, sliced

Instructions

  1. In a pot, heat oil over medium-high heat.
  2. Add the chicken and cook until browned.
  3. Stir in the coconut milk, chicken broth, curry paste, and fish sauce.
  4. Add mushrooms and spinach, and simmer for 10 minutes.
  5. Finish with lime juice and garnish with green onions.
