- 1 cup rice
- 1 pound steak, diced
- 1 cup queso cheese
- 1 bell pepper, chopped
- 1 onion, chopped
- 2 cups beef broth
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat and add the diced steak. Season with cumin, chili powder, salt, and pepper.
- Cook the steak until browned, then add the chopped onions and bell pepper. Sauté until vegetables are tender.
- Add the rice to the skillet and stir to combine with the steak and vegetables.
- Pour in the beef broth, bring to a boil, then reduce heat and cover. Simmer until the rice is cooked, about 18-20 minutes.
- Stir in the queso cheese until melted and creamy. Serve hot.
Notes
- For a spicier version, add jalapeños or hot sauce.
- Feel free to substitute chicken or tofu for the steak.
