- 4 cups broccoli florets
- 1 cup diced turkey bacon
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 2 cups shredded smoked gouda cheese
- 1 cup heavy cream
- Salt to taste
- Pepper to taste
Instructions
- In a large pot, cook the turkey bacon over medium heat until crispy.
- Add the onion and garlic, cooking until softened.
- Stir in the broccoli and vegetable broth, bringing to a boil.
- Reduce heat and simmer until the broccoli is tender.
- Blend the soup until smooth, then return to heat.
- Stir in the smoked gouda and heavy cream, cooking until the cheese is melted.
- Season with salt and pepper, and serve hot.
Notes
- This soup can be made ahead of time and stored in the refrigerator.
- For added flavor, top with additional smoked gouda before serving.
