- 4 boneless chicken thighs
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 lemon, juiced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup frozen peas
- 1 tablespoon chopped fresh parsley
Instructions
- Place chicken thighs in the slow cooker.
- In a bowl, mix rice, chicken broth, lemon juice, garlic, thyme, rosemary, salt, and pepper.
- Pour the mixture over the chicken.
- Cook on low for 6-8 hours or until chicken is tender.
- In the last 30 minutes, add frozen peas.
- Garnish with chopped parsley before serving.
Notes
- For extra flavor, marinate the chicken in lemon juice and herbs overnight.
- Serve with a side salad.
