Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the pumpkin puree, softened butter, brown sugar, granulated sugar, and vanilla extract until smooth.
- In a separate bowl, combine graham cracker crumbs, pumpkin pie spice, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture and stir until just combined.
- Fold in the chocolate chips and mini marshmallows.
- Drop spoonfuls of dough onto a lined baking sheet.
- Bake for 12-15 minutes or until the edges are golden.
- Allow to cool before serving.
