- 1 cup cornmeal
- 1 cup all-purpose flour
- 1 cup pumpkin puree
- 1/2 cup sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 2 large eggs
- 1/4 cup vegetable oil
- 1 cup milk
- 1/4 cup honey
- 1/2 cup unsalted butter, softened
Instructions
- Preheat the oven to 400°F (200°C) and grease a baking dish.
- In a bowl, mix together cornmeal, flour, sugar, baking powder, salt, cinnamon, and nutmeg.
- In another bowl, whisk together eggs, pumpkin puree, vegetable oil, milk, and honey.
- Combine wet and dry ingredients, stirring until just mixed.
- Pour the batter into the prepared baking dish and bake for 25-30 minutes.
- While the cornbread is baking, prepare the cinnamon honey butter by mixing softened butter, honey, and cinnamon together.
- Allow the cornbread to cool slightly before serving it warm with the cinnamon honey butter.

- Best served warm for maximum flavor.
- Top with additional honey for extra sweetness, if desired.
