- 1 ½ cups all-purpose flour

- 1 large egg
- ½ cup milk
- ½ cup vegetable oil

- 1 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line a mini muffin tin with paper liners.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, beat the egg and then add the milk, vegetable oil, and vanilla extract. Mix well.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Gently fold in the chocolate chips.
- Fill each muffin cup about 2/3 full with batter.
- Bake for 12-15 minutes or until a toothpick inserted comes out clean.
- Let them cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
Notes
- For added flavor, consider using mini chocolate chips instead of regular sizes.
- These muffins freeze well, so you can make a batch and save some for later.
