- 4 medium zucchini
- 1 pound ground beef
- 1 cup marinara sauce
- 1 teaspoon Italian seasoning
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Cut zucchini in half lengthwise and scoop out the center.
- In a skillet, heat olive oil over medium heat and add garlic.
- Add ground beef and cook until browned, breaking it into small pieces.
- Stir in marinara sauce and Italian seasoning, and simmer for 5 minutes.
- Fill zucchini halves with beef mixture and top with Parmesan and mozzarella cheese.
- Place in a baking dish and bake for 25-30 minutes until zucchini is tender.
- Serve warm and enjoy!
Notes
- Feel free to add vegetables or spices to the beef mixture for extra flavor.
- These zucchini boats can be made ahead of time and baked just before serving.
