- 1 pound ground chicken
- 4 slices turkey bacon
- 1 cup diced bell peppers
- 1 cup diced onions
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn
- 1 cup shredded cheese
- 1 tablespoon fajita seasoning
- 1/2 teaspoon garlic powder
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, cook the turkey bacon until crispy, then remove and chop.
- Add ground chicken, bell peppers, and onions to the skillet. Cook until chicken is browned.
- Stir in black beans, corn, chopped turkey bacon, fajita seasoning, and garlic powder.
- Transfer the mixture to a baking dish and top with shredded cheese.
- Bake for 25-30 minutes until heated through and cheese is bubbly.
Notes
- For a spicier dish, add jalapeño peppers to the mixture.
- Leftovers can be reheated in the microwave.
