Ingredients

  • 1 pound ground chicken
  • 4 slices turkey bacon
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn
  • 1 cup shredded cheese
  • 1 tablespoon fajita seasoning
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, cook the turkey bacon until crispy, then remove and chop.
  3. Add ground chicken, bell peppers, and onions to the skillet. Cook until chicken is browned.
  4. Stir in black beans, corn, chopped turkey bacon, fajita seasoning, and garlic powder.
  5. Transfer the mixture to a baking dish and top with shredded cheese.
  6. Bake for 25-30 minutes until heated through and cheese is bubbly.

Notes

  • For a spicier dish, add jalapeño peppers to the mixture.
  • Leftovers can be reheated in the microwave.
