- 8 ounces rotini pasta
- 1 cup cherry tomatoes
- 1 cucumber
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 8 ounces mozzarella balls
- 1 jar of black olives
- 1 jar of pepperoncini
Instructions
- Cook the rotini pasta according to package instructions.
- Once cooked, drain and rinse under cold water.
- In a large bowl, combine pasta, cherry tomatoes, cucumber, olive oil, Italian seasoning, salt, and pepper.
- Cut mozzarella balls in half and place them in the salad.
- Add slices of black olives to resemble eyeballs.
- Top with pepperoncini for a spooky touch.
- Toss gently and serve immediately or refrigerate until ready to serve.
Notes
- This salad can be made a day ahead of time; just add the olives before serving.
- For an extra ghoulish effect, use food coloring on the pasta water.
