- 1 large egg
- ½ cup milk
- ⅓ cup vegetable oil
- 1 cup fresh blueberries
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, beat the egg, then add the milk and vegetable oil, mixing until combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the blueberries.
- Divide the batter evenly among the muffin cups.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
- Let cool for a few minutes before transferring to a wire rack.
Notes
- For extra flavor, you can add a teaspoon of vanilla extract to the wet ingredients.
- Make sure not to overmix the batter to keep the muffins fluffy.
