Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mix together the zucchini, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla.
  3. In another bowl, combine the flour, baking soda, baking powder, ground cinnamon, and salt.
  4. Gradually add the dry ingredients to the wet ingredients and stir until just combined. Fold in walnuts if using.
  5. Pour the batter into the prepared loaf pan.
