  • 24 ounces cream cheese, softened
  • 1 cup sugar
  • 1/2 cup apple cider
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of a springform pan.
  3. In a mixing bowl, beat cream cheese until smooth. Add sugar, apple cider, eggs, vanilla, cinnamon, nutmeg, and ginger, mixing until well combined.
  4. Pour the cheesecake filling over the crust in the springform pan.
  5. Bake for 55-60 minutes or until the center is set. Turn off the oven and let the cheesecake cool with the oven door ajar.
  6. Refrigerate for at least 4 hours before serving.

Notes

  • For a richer flavor, you can add caramel sauce on top before serving.
  • Serve with whipped cream for added indulgence.
