- 2 pounds beef chuck, cut into 1-inch cubes
- 4 cups beef broth
- 3 cups carrots, sliced
- 2 cups potatoes, diced
- 1 cup onions, chopped
- 4 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt to taste
- Black pepper to taste
- 3 tablespoons olive oil
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the beef and brown on all sides.
- Stir in the onions and garlic, cooking until soft.
- Add the tomato paste, Worcestershire sauce, thyme, and rosemary.
- Pour in beef broth, then add carrots and potatoes.
- Bring to a boil, then reduce heat and simmer for about 2 hours, or until the meat is tender.
- Season with salt and pepper to taste before serving.
