- 12 large mushrooms
- 1 cup wild rice
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup shredded cheese (optional)
- 1/4 cup parsley, chopped
Instructions
- Preheat your oven to 375°F (190°C).
- Cook wild rice according to package instructions.
- In a skillet, heat olive oil over medium heat. Add chopped onion and garlic, cooking until soft.
- Stir in the cooked wild rice, thyme, salt, and pepper. Mix well and remove from heat.
- Stuff each mushroom with the rice mixture and place on a baking sheet.
- Sprinkle with shredded cheese if using.
- Bake for 20 minutes until mushrooms are tender.
- Garnish with chopped parsley before serving.
Notes
- For a spicy kick, add red pepper flakes to the rice mixture.
- Feel free to experiment with different vegetables in the stuffing.
