  • 1 cup wild rice
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheese (optional)
  • 1/4 cup parsley, chopped

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook wild rice according to package instructions.
  3. In a skillet, heat olive oil over medium heat. Add chopped onion and garlic, cooking until soft.
  4. Stir in the cooked wild rice, thyme, salt, and pepper. Mix well and remove from heat.
  5. Stuff each mushroom with the rice mixture and place on a baking sheet.
  6. Sprinkle with shredded cheese if using.
  7. Bake for 20 minutes until mushrooms are tender.
  8. Garnish with chopped parsley before serving.

Notes

  • For a spicy kick, add red pepper flakes to the rice mixture.
