Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, combine pumpkin puree, vanilla pudding mix, vegetable oil, and sugar.
- Beat in the eggs one at a time.
- In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 60-70 minutes or until a toothpick comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring to a wire rack.
Notes
- For extra flavor, you can add nuts or chocolate chips to the batter.
