- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 3 cups chicken broth
- 1 pound rotisserie chicken, shredded
- 1 package (16 ounces) gnocchi
- 1 cup heavy cream
- 2 cups fresh spinach
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until onions are translucent.
- Pour in chicken broth and bring to a boil.
- Add shredded rotisserie chicken and gnocchi. Cook according to package instructions.
- Stir in heavy cream and spinach, and season with Italian seasoning, salt, and pepper. Simmer for 5 minutes.
- Serve hot, garnished with extra spinach if desired.
Notes
- For a lighter soup, substitute half-and-half for heavy cream.
- Feel free to add other vegetables such as carrots or celery for more flavor.
