- 1 1/2 cups sugar cookie dough
- 16 ounces cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup sour cream
Instructions
- Preheat the oven to 325°F (160°C).
- Press the sugar cookie dough into the bottom of a springform pan to form the crust.
- In a large mixing bowl, beat the cream cheese and granulated sugar until smooth.
- Add eggs one at a time, mixing well after each addition, then stir in the vanilla extract and sour cream.
- Pour the cheesecake filling over the crust in the springform pan.
- Bake for 50-60 minutes until the edges are set and the center is slightly jiggly.
- Cool in the oven with the door ajar for 1 hour, then refrigerate for at least 4 hours before serving.
Notes
- For best results, let the cheesecake chill overnight.
- Top with whipped cream or additional sugar cookie crumbles for extra sweetness.
