- 8 ounces pasta of your choice
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 4 cups fresh spinach
- ¼ teaspoon red pepper flakes
- Salt to taste
- Freshly ground black pepper to taste
- ¼ cup grated Parmesan cheese (optional)
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat.
- Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the sliced mushrooms and cook until they are golden brown, about 5 minutes.
- Add the spinach and red pepper flakes, cooking until the spinach wilts.
- Combine the cooked pasta with the mushroom and spinach mixture. Season with salt and pepper.
- Serve hot, topped with grated Parmesan cheese if desired.
Notes
- For extra flavor, consider adding a splash of white wine after sautéing the mushrooms.
- This dish can easily be made vegetarian by omitting the cheese.
