- 4 large eggs
- 1 cup diced tomatoes
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon cayenne pepper
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh cilantro
Instructions
- In a pan, heat the olive oil over medium heat.
- Add the onion and garlic; sauté until translucent.
- Stir in the diced tomatoes, chili powder, cumin, cayenne, salt, and black pepper.
- Simmer on low for about 10 minutes.
- Make four wells in the sauce and crack an egg into each.
- Cover the pan and cook until the eggs are set to your liking.
- Garnish with chopped cilantro before serving.
Notes
- Adjust the spice level by adding more or less cayenne pepper.
- Serve with crusty bread for dipping.
