Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix the pumpkin puree, sugar, brown sugar, butter, egg, and vanilla until smooth.
- In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
- Bake for 12-15 minutes or until the edges are lightly golden.
- Let cool before frosting.
- To make the frosting, beat together softened butter, powdered sugar, vanilla, and cinnamon until creamy.
- Spread the frosting generously on the cooled cookies.

- For a spicier flavor, add a pinch of ginger or cloves to the dough.
