- 1 cup brown sugar
- 1 cup grated zucchini
- 1 cup chopped apples
- 1/2 cup vegetable oil
- 2 eggs
- 1 teaspoon vanilla extract
- 1.5 cups all-purpose flour

- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, mix the brown sugar, eggs, and oil until well combined.
- Stir in the grated zucchini, chopped apples, and vanilla extract.
- In another bowl, combine the dry ingredients: flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Pour the batter into the prepared loaf pan.
- Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool before slicing.
Notes
- This bread pairs well with butter.
- For extra flavor, add chopped nuts or raisins to the batter.
