- 2 cups corn kernels
- 1.5 pounds chicken breasts
- 1 cup cream cheese
- 1 cup shredded cheddar cheese
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 cup chopped cilantro
- 1/2 cup mayonnaise
Instructions
- Layer the corn and chicken in the slow cooker.
- Top with cream cheese, cheddar cheese, garlic powder, chili powder, and cumin.
- Cover and cook on low for 5-6 hours, or until the chicken is cooked through.
- Shred the chicken and stir in cilantro and mayonnaise before serving.
Notes
- For a spicier version, add diced jalapeños.
- Can be served with tortillas or over rice.
