- 1 cup pumpkin puree
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 2 teaspoons pumpkin pie spice
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup cinnamon sugar (for sprinkling)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a large bowl, beat together the pumpkin puree, brown sugar, and granulated sugar until smooth.
- Add softened butter, eggs, and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the flour, pumpkin pie spice, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture until fully incorporated.
- Pour the batter into the prepared baking pan and smooth the top.
- Sprinkle cinnamon sugar evenly over the top of the batter.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool before slicing into bars.
Notes
- For a fun twist, add chocolate chips to the batter before baking.
- These blondies taste even better the next day!
