- 1 cup pumpkin puree
- 1 cup graham cracker crumbs
- 1 cup chocolate chips
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup granulated sugar

- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, cream together the butter, brown sugar, and granulated sugar.
- Add the pumpkin puree, egg, and vanilla extract to the mixture and blend well.
- In another bowl, combine the graham cracker crumbs, flour, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet mixture until fully combined.
- Fold in the chocolate chips.
- Drop spoonfuls of the cookie dough onto a parchment-lined baking sheet.
- Bake for 12-15 minutes until the edges are lightly golden.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
- For an extra crunch, add chopped nuts into the dough.
- These cookies can be stored in an airtight container for up to a week.
