  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1 cup mini marshmallows
  • 1 cup chocolate chips
  • 1/2 cup graham cracker crumbs

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together pumpkin puree, butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the egg and vanilla extract.
  4. In another bowl, whisk together flour, baking soda, cinnamon, nutmeg, ginger, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the mini marshmallows, chocolate chips, and graham cracker crumbs.
  7. Drop tablespoons of dough onto a baking sheet lined with parchment paper.
  8. Bake for 12-15 minutes or until edges are golden.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
