- 1 cup pumpkin puree

Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, mix sugars, vegetable oil, and egg until well combined.
- Add pumpkin puree and vanilla extract to the sugar mixture, and stir until blended.
- Gradually add the dry ingredients into the wet ingredients and mix until just combined.
- Fill cupcake liners with batter and bake for 20-25 minutes or until a toothpick comes out clean.
- Allow to cool before serving.
Notes
- For added flavor, consider adding chocolate chips or nuts.
- These cupcakes can be topped with cream cheese frosting for extra sweetness.
