- 1 can pumpkin puree
- 1 can black beans
- 1 can kidney beans
- 1 can diced tomatoes
- 1 cup vegetable broth
- 1 onion, diced
- 2 cloves garlic, minced
- 2 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- salt to taste
- pepper to taste
Instructions
- In a large pot, sauté the onion and garlic until fragrant.
- Add the chili powder, cumin, and paprika. Stir for a minute.
- Mix in the pumpkin puree, black beans, kidney beans, diced tomatoes, and vegetable broth.
- Bring to a simmer and let cook for 20-30 minutes.
- Season with salt and pepper before serving.
Notes
- This recipe can be made vegan by using vegetable broth.
- For added heat, include diced jalapeños.
