- 8 ounces cream cheese
- 1 cup canned pumpkin puree

- 1 cup graham cracker crumbs
- 12 ounces white chocolate chips
Instructions
- In a mixing bowl, beat the cream cheese until smooth.
- Add the pumpkin puree, powdered sugar, vanilla extract, and pumpkin pie spice. Mix until well combined.
- Chill the mixture in the refrigerator for at least 1 hour.
- Once chilled, scoop out small portions and roll them into balls.
- Roll each ball in the graham cracker crumbs, coating evenly.
- Melt the white chocolate chips and dip each truffle in the melted chocolate.
- Place the truffles on a parchment-lined baking sheet and refrigerate until the chocolate hardens.

- For an extra crunch, you can add finely chopped nuts to the graham cracker coating.
