- 1 cup pistachios, shelled

Instructions
- Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a food processor, blend the pistachios until they are finely ground.
- In a mixing bowl, cream together the butter and sugar until light and fluffy.
- Add in the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract and ground pistachios.
- In a separate bowl, combine the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with the brewed coffee.
- Pour the batter into the prepared cake pan.
- Bake for 30-35 minutes or until a toothpick comes out clean from the center.
- Let cool before serving.
