Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, combine flour, sugar, baking powder, and salt.
- In a separate bowl, mix melted butter, eggs, and vanilla.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Gently fold in the diced peaches.
- Spoon the batter into the prepared muffin tin.
- In a small bowl, mix brown sugar, oats, and cinnamon for the crumb topping.
- Sprinkle the crumb mixture generously over the muffin batter.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Allow to cool for a few minutes before serving.
Notes
- For best results, use fresh, ripe peaches.
- Feel free to add nuts for extra crunch.
