- 1 cup bell pepper, diced
- 1 cup zucchini, sliced
- 1 can diced tomatoes
- 2 cups vegetable broth
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic; sauté until translucent.
- Include bell pepper and zucchini; cook for another 3-4 minutes.
- Stir in the pasta, diced tomatoes, vegetable broth, Italian seasoning, salt, and pepper.
- Bring to a boil, then reduce heat and cover.
- Simmer for 10-12 minutes or until pasta is cooked through.
- Serve warm and enjoy!
