Proteins:
- 1 lb chicken thighs, diced
- 1 lb smoked sausage, sliced
- 1 lb shrimp, peeled and deveined (optional)
Vegetables:
- 1 large onion, chopped
- 1 bell pepper, diced
- 2 stalks celery, chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 cup frozen peas (optional)
Rice & Broth:
- 2 cups long-grain white rice
- 4 cups chicken broth
Spices & Seasonings:
- 2 tsp Cajun seasoning
- 1 tsp dried thyme
- 1 tsp paprika
- Salt & pepper to taste
Oils:
- 2 tbsp olive oil or vegetable oil
Instructions
- Sauté Vegetables – Heat oil in a large pot over medium heat. Sauté onion, bell pepper, and celery for 5 minutes. Add garlic and cook for 1 minute.
- Cook Proteins – Add chicken and sausage, cook for 5-7 minutes until browned.
- Add Tomatoes & Peas – Stir in diced tomatoes and peas (if using). Simmer for 3-4 minutes.
- Seasoning – Mix in Cajun seasoning, thyme, paprika, salt, and pepper.
- Cook the Rice – Stir in rice, then pour in broth. Bring to a boil, cover, and simmer for 20-25 minutes.
- Add Shrimp – In the last 5 minutes, add shrimp. Cover and cook until pink.
- Rest & Serve – Let sit for a few minutes, then garnish with parsley or green onions and serve warm.
