  • 1 lb chicken thighs, diced
  • 1 lb smoked sausage, sliced
  • 1 lb shrimp, peeled and deveined (optional)

Vegetables:

  • 1 large onion, chopped
  • 1 bell pepper, diced
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup frozen peas (optional)

Rice & Broth:

  • 2 cups long-grain white rice
  • 4 cups chicken broth

Spices & Seasonings:

  • 2 tsp Cajun seasoning
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt & pepper to taste

Oils:

  • 2 tbsp olive oil or vegetable oil

Instructions

  1. Sauté Vegetables – Heat oil in a large pot over medium heat. Sauté onion, bell pepper, and celery for 5 minutes. Add garlic and cook for 1 minute.
  2. Cook Proteins – Add chicken and sausage, cook for 5-7 minutes until browned.
  3. Add Tomatoes & Peas – Stir in diced tomatoes and peas (if using). Simmer for 3-4 minutes.
  4. Seasoning – Mix in Cajun seasoning, thyme, paprika, salt, and pepper.
  5. Cook the Rice – Stir in rice, then pour in broth. Bring to a boil, cover, and simmer for 20-25 minutes.
  6. Add Shrimp – In the last 5 minutes, add shrimp. Cover and cook until pink.
  7. Rest & Serve – Let sit for a few minutes, then garnish with parsley or green onions and serve warm.
