- 4 boneless, skinless chicken breasts
- 1/2 cup flour
- 1 large egg
- 1 cup breadcrumbs
- 1/2 cup grated Romano cheese
- 2 lemons (juice and zest)
- 1/4 cup olive oil
- 1 tsp salt
- 1 tsp black pepper
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix flour, salt, and pepper.
- In another bowl, whisk the egg.
- In a third bowl, combine breadcrumbs and Romano cheese.
- Dip chicken breasts in flour, then egg, and coat with breadcrumb mixture.
- Heat olive oil in a large skillet over medium heat.
- Brown chicken on both sides, then transfer to a baking dish.
- Squeeze lemon juice over the chicken and sprinkle with lemon zest.
- Bake for 25-30 minutes or until the chicken is cooked through.
Notes
- For added flavor, marinate chicken in lemon juice for 1 hour before cooking.
- Serve with a side of pasta or salad.
