- 2 tomatoes, chopped
- 2 tablespoons curry powder
- 1 teaspoon turmeric
- 1 teaspoon salt
- 1 tablespoon oil
- 1 handful fresh coriander, chopped
Instructions
- Heat oil in a large pot over medium heat.
- Add onions, garlic, and ginger, sauté until fragrant.
- Add chicken pieces and brown on all sides.
- Stir in tomatoes, curry powder, turmeric, and salt.
- Pour in coconut milk and bring to a simmer.
- Cook until chicken is tender and sauce thickens.
- Garnish with fresh coriander before serving.
