- 1 pound Italian sausage
- 1 can white beans, drained and rinsed
- 4 cups chicken broth
- 1 cup diced tomatoes
- 1 cup chopped kale or spinach
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 teaspoons dried oregano
- 1 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic; sauté until translucent.
- Add the Italian sausage, breaking it up with a spoon, and cook until browned.
- Stir in diced tomatoes, chicken broth, white beans, oregano, and black pepper.
- Bring to a simmer and cook for 15 minutes.
- Add chopped kale or spinach and cook until wilted, about 5 minutes.
- Serve hot.
Notes
- This soup can be made ahead of time and tastes even better the next day.
- Feel free to add other vegetables like carrots or celery for extra nutrition.
