Instructions

  1. Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic; sauté until translucent.
  2. Add the Italian sausage, breaking it up with a spoon, and cook until browned.
  3. Stir in diced tomatoes, chicken broth, white beans, oregano, and black pepper.
  4. Bring to a simmer and cook for 15 minutes.
  5. Add chopped kale or spinach and cook until wilted, about 5 minutes.
  6. Serve hot.
