High Protein Southwest Chicken Salad with Turkey Bacon Delight

Ingredients

  • 2 cups cooked chicken, diced
  • 1 cup black beans, rinsed and drained
  • 1 cup corn, fresh or frozen
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 4 slices turkey bacon, cooked and crumbled
  • 1 cup romaine lettuce, chopped
  • 1/2 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the chicken, black beans, corn, tomatoes, avocado, turkey bacon, lettuce, red onion, and cilantro.
  2. In a separate small bowl, whisk together lime juice, olive oil, cumin, salt, and pepper.
  3. Pour the dressing over the salad and toss well to combine.
  4. Serve immediately or chill in the refrigerator for 30 minutes before serving.
